Creamy, earthy, sweet and savoury. this beetroot, chickpea and butterbean hummus is aa-ok.
what you'll need:
one fresh beetroot
4 cloves garlic
3 tbs olive oil
2 tsp smoked paprika
1 tbsp hot sauce
salt & pepper
garnish with whatever you like. i used cress and pomegranate.
1. roast the garlic and beetroot in olive oil, sprinkle over a little salt and pepper. take the garlic out when soft and leave the beetroot for about 15-20 mimutes at 180 degree heat.
2. place all the ingredients into a processor and blitz.
3. add a little water as you go and season to taste.
