SPICED COCONUT BLUEBERRY PORRIDGE, serves 2
105 g rolled oats
400 ml water
200 ml coconut milk 
1/4 tsp ground cinnamon
1/4 tsp ground cardamom 
Pinch ground ginger
Pinch salt 
Toppings:
Wild blueberries 
Coconut chips
Peanut butter 
Maple syrup 
METHOD
Combine all ingredients over medium high heat and bring to boil. Turn down the heat and let simmer for 4-5 minutes, stirring from time to time until you have the consistency you like. Top with blueberries, coconut chips, maple syrup and peanut butter.

Gingerbread Oatmeal:⁣⁣
- 80g oats⁣⁣
- pinch of salt⁣⁣
- 1tsp ground ginger⁣⁣
- 1/4tsp ground cinnamon ⁣⁣
- 1 medium banana, sliced in 1/2⁣⁣
- splash of plant milk (I use oat milk)⁣⁣
- 1tbsp maple syrup⁣⁣
- 1tsp vanilla extract ⁣⁣
⁣⁣
Method:⁣⁣
1. Pour your oats into a small saucepan, then stir in the salt, cinnamon, ginger & 1/2 diced banana, then pour in a little boiling water to cover and soak for 2 mins until gloopy.⁣⁣
2. Pour in a splash of milk (depending on your desired consistency), the maple syrup & vanilla extract, mix well to combine.⁣⁣
3. Heat it up on the hob and cook for 5 mins until hot and creamy, add more milk for a creamy consistency, or cook for longer for a thicker consistency. ⁣⁣
4. Serve in your bowl, then top with the other 1/2 of your banana and desired toppings! 🍓Had some overnight oats today because I was lucky enough to remember I had some chia seeds in my backpack from a previous trip. 🥳 Good timing because it’s nice and warm today and the craving for something cool took over. 😚

Strawberry and Cashew Overnight Oats
1/2 cup rolled oats
2 tsp chia seeds
1/2 cup unsweetened vanilla almond milk 
Pinch of salt
Pinch of salt
1/2 cup diced strawberries
2 tbsp cashews

Add all ingredients to a mason jar or Tupperware container. Give a good stir and place in fridge to thicken overnight. Dazu ist Porridge super gesund und einfach zuzubereiten. Für meine Version brauchst du für eine Portion: 1/2 Banane, 1/2 Apfel, anderes Obst nach Saison und Geschmack (z.B. 1/2 Kaki oder 1 Pflaume), 100ml Sojamilch, 150ml Wasser, 3EL (feine) Haferflocken, 1EL Walnüsse, 1EL Hanfsamen, 2 Parannüsse, 1EL Nussmus (ich liebe Cashewmus), 1TL Zimt, 1TL Kurkuma, 1/2 EL Kokosöl und etwas Salz. 🥛🌰🍌🍎🥝

Für die Zubereitung musst du zunächst das Obst in kleine Stücke schneiden und mit dem Kokosöl im Topf anbraten. Gib dann den einen Esslöffel Nussmus hinzu lass das Nussmus auch etwas mitanbraten. Dann kommen die Haferflocken, Walnüsse, Paranüsse, Hanfsamen und Gewürze (Zimt, Kurkuma und Salz) in den Topf und rösten ebenfalls kurz mit. Das Ganze wird dann mit Wasser und der Pflanzenmilch abgelöscht. Nun muss der Brei noch 5-10 Minuten bei mittlerer Hitze vor sich hinkochen (an und zu mal umrühren) und fertig ist das leckere Porridge! 🥰😋

Don’t hog the nog! @chefkube inspired me to whip up some holiday overnight oats! 1/3 c oats 1/3 c almond milk (splash of eggnog) 1/3 plain whole milk yogurt 1 tsp cinnamon and a pinch of salt. Pequeno almoço mais reconfortante para dias frios como o de hoje 🥶😋 Papas de aveia de dióspiro e especiarias com banana caramelizada, mirtilos, granola caseira e manteiga de amêndoa @pipandnut 🥰🍑🍯 ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Basta cozerem a aveia em leite/bebida vegetal/água ( 2 medidas de líquido para cada medida de flocos de aveia), juntamente com uma pitada de canela, baunilha, cardamomo, erva doce e noz moscada. Quando o líquido tiver sido todo absorvido juntam 1 dióspiro mole grande ou 2 mais pequenos sem pele e esmagado. A nossa receita de pão de ló tem-se vindo a demarcar da da minha avó, que o fazia por medidas: 6 ovos, 1 +1/2 chávena almoçadeira de açúcar e outra de farinha (+fermento | pitada de sal | raspa de limão!). Esta não tem glúten nem lácteos, mas não é Vegan porque leva ovos; os substitutos de ovo não funcionam bem aqui, pelo menos nas minhas mãos...
Se bem que de vez em quando, ao domingo, saiam panquecas, na verdade eles preferem o bolo (“OPTIMIZADO”)! Demora cerca de 10 minutos a preparar:
Enquanto o forno aquece a 180°, barramos uma forma (com buraco) com azeite ou óleo de coco e salpicamos com farinha;
Batemos no robot a 37 graus, (borboleta, vel.4, 7 minutos: •7 ovos inteiros (sim, eles todos comem ovos com frequência) com •120 gr de açúcar mascavado,
até obter uma massa fofa (a borbulhar) e juntamos •160 gr de farinha integral (80 gr trigo sarraceno + 80 gr AVEIA sem glúten (flocos triturados), ou total de aveia
•1 pitadinha de sal
•1 c. sobremesa de fermento em pó, e •raspa + 1 c. chá de sumo de limão
Envolvemos com cuidado. Colocamos na forma e levamos ao forno durante cerca de 25’ (dependendo do forno!) ou até ficar douradinho! (Quem não tem robot: separa as gemas das claras, bate as claras em castelo com o sumo de limão e a pitada de sal, com a batedeira, junta o açúcar, depois a farinha + o fermento e já está!)

Recently I tried overnight oats and I really like them for a breakfast meal! I am sharing my recipe for it. I like to add dark cocao powder because it gives it taste with zero sugar.

150 gm milk of your choice, i use @alpro almond milk unsweetened
50 gm oats, i use @quaker oats
5 gm of chia seeds
10 gm of dark cocoa powder @drosteholland 
20 gm mix of walnuts and almonds
75 gm of frozen blueberries
50 gm of frozen raspberries
5 gm honey (optional)
dash of cinnamon on top

nutritions:
444 kcals, 40 gm carbs, 14 gm protein, 22.3 gm fats, 10 gm fibers

I add them in a glass container with the order top to bottom and leave them overnight in the fridge.

Morning Porridge Peeps ✨🎄
The flu has hit & it’s hit me hard. First time having it & it’s whipped me out. From major aches & pains all over my body, especially in my back, to a fever of nearly 40 degrees but still feeling chilled, mashed together with an incredibly sore throat & chest - I’m drained. On my 3rd day of it. Defiantly better than Sunday & the early hours of Monday morning when the paramedics had to come to my house, but no where near out of it yet. So in a long winded way, what I’m trying to say is I don’t think I’m going to be active on here for a few days. I’m finding it hard to look at screens as my eyes hurt & im on plain bowls of porridge as I have no appetite. So let’s reminisce together this wonderful winter bowl of Cinnamon & Orange Porridge with @meridianfoods Rich Roast Peanut Butter & Walnuts, that I had Saturday before this storm hit 🍊🥜🧡

C’est avec cette tuerie que je me régale depuis hier matin ! Et comme je suis une fille sympa, je vous donne la recette. Pour la réaliser, il vous faudra 3 œufs et 1 blanc, 400g de yaourt au soja, 40g de fécule de maïs, de la vanille en poudre, de l’extrait de vanille bourbon et enfin des pruneaux dénoyautés. Mélangez respectivement dans un grand bol l’ensemble des ingrédients puis enfournez votre préparation à 170 degrés durant 55min. Une fois cuit, laissez votre far breton aux pruneaux refroidir à l’air libre puis placez-le au frais😊
Je l’ai accompagné les 2 matins par du yaourt au lait de coco light @ya.desserts et un caramel de dattes healthy et fait maison. La recette est hyper simple : mixez 130g de pâte de dattes avec de l’eau bouillante en rajoutant de la vanille en poudre et de l’extrait de vanille bourbon. Ajustez l’eau selon la consistance souhaitée (plus ou moins liquide)😋
Le yaourt de coco vient adoucir le goût sucré du caramel de dattes, qui lui se marie parfaitement au flan aux pruneaux🤤🍮🥥
