Root vegetables are no new discovery- they grow underground and have many health benefits that have been enjoyed for thousands of years. Here’s a breakdown of some common root vegetables for you:⁠⠀

Carrots- are a great source of vitamins A and K, as well as antioxidants like beta-carotene. Additionally, there are studies that link carrot consumption to lower cholesterol levels and improved antioxidant status. I like to eat carrots raw as a snack, but they’re also delicious steamed, roasted, & in stir-fries. ⁠⠀

Beets- These nutritious root veggies are packed with fiber, folate, and manganese. They’re also a good source of nitrates and may improve exercise performance and increase blood flow, but more research is needed. 🍍 I got your covered with this super easy-to-make, Party-In-My-Mouth Pineapple Salsa! (*Swipe to see some steps and a closer look at the salsa*)

The sweetness of the pineapple is a great compliment to the spiciness of the jalapeño. Pineapples are one of my favorite fruits and 1 cup of pineapple has 131% of your RDI vitamin C, 76% of your RDI manganese, and small amounts of vitamin B6, thiamin, folate, potassium, magnesium and niacin. Pineapple is also a great source of antioxidants and its enzymes can ease digestion.

Here’s what you need:
1 pineapple
1 red bell pepper
1/2 red onion
1 tomato
1 lime
1 jalapeño
Sea salt
.
What to do:
1 - Slice off one side of the pineapple and then a back side
2 - Cut out the middle and cut that pineapple into small chunks
3 - Dice the bell pepper, tomato, red onion and jalapeño.
4 - Combine all ingredients in a bowl.
5 - Squeeze a whole lime over it and add some sea salt
6 - Mix well and then place in the pineapple on a cutting board or plate.
7 - Enjoy 🤩

Who’d want a slice of this delicious #vegan Chocolate Zucchini Cake? 🥒🍫It’s so incredibly moist and rich on the inside with the perfect decadent chocolate coating! 😍🔥 Possibly my new favorite quick and easy chocolate cake! 🤤 Full recipe below⇣
—•—Ingredients—•—
2 cups spelt flour
1/2 cup brown sugar
1/3 cup cacao powder
1.5 Tbsp espresso powder (or 1 tsp cinnamon)
1 Tbsp baking powder
1 tsp baking soda
0.7oz (20g) dark chocolate, chopped
1 cup zucchini, finely shredded
1 cup vegan yogurt
1/2 cup vegetable oil
1 Tbsp apple cider vinegar

Coating:
3.5oz (100g) dark chocolate
—•—Method—•—
1. Place the 7 dry ingredients in a mixing bowl and combine. Place the wet ingredients in a separate bowl and whisk together. Combine wet with dry ingredients with a spatula until you have a smooth mixture (don’t over mix).
2. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
3. Scoop the batter into the pan and carefully even out with a spoon.
4. Place in the oven for 50-55 minutes until a toothpick inserted comes out clean.
5. Place on a cooling rack and let cool down completely.
6. Melt your chocolate over a water bath and spread over the cake, let cool down completely until the chocolate is firm before slicing.

Yesterday I got asked a question if I have ever struggled with body image issues, and without a doubt the answer is yes. I spent years and years and years and then a couple more hating absolutely everything about my body/appearance. It took me nearly forever, lots of books, podcasts, and therapy to come to a place a full acceptance. One day i decided that i was going to start loving myself, and so i carried out my life with love from that moment forward. Far too many days are spent comparing ourselves to others. When I now look at this picture of myself I no longer see the parts of myself that I once saw as flaws. I think it’s super important to remember that another woman’s beauty is not the absence of your own. We all struggle, have our insecurities and are just doing the best we can. It’s a beautiful thing to have lungs that allow you to breathe air, and legs to climb mountains and it’s a shame that sometimes we don’t realize that’s enough. Les paso detallada mi receta de vegan F A L A F E L 💚
2 latas de garbanzos o 400 gr de garbanzos secos e hidratados toda la noche anterior (estos últimos los hierven 1 hora desde agua fría)
1 cebolla blanca
2 ajos
Puñado de perejil fresco
1 cda pimentón 
1 cda gram masala
1 cda sal marina
1 taza harina de garbanzos (puden usar la que ya viene para hacer fainá)
Procedimiento:
1. Secar los garbanzos en una placa al horno hasta que queden sequitos unos 15 min
2. Procesar los garbanzos con la cebolla, el perejil, el ajo y aceite de oliva (traen de poner e aceite de a poco así no se hace una sopa)
3. Pasar a un bowl y agregar las especias!
4. Mezclar bien con la mano y darle la forma que mas les guste!
5. Freir en poco aceite o mandar al horno 🌈
Yo los acompañe con mayo vegana y salsa picante y ensalada de tomate, cebolla, perejil y rabanito 💛
Espero que los hagaaan son la glooria 💪🏼
