Today on #BehindTheKnife 🔪We have Master Chef and Owner Mark Okuda @mastermgt of Brothers Sushi @TheBrothersSushi. We’ve been following Mark on his journey to become a master sushi chef for nearly 16 years, having met as kids we always knew mark would end up running a kitchen. He always loved being in the kitchen, from a young age he watched and helped his mom around the kitchen and she too was in the restaurant industry for over 30 years. Growing up in North Hollywood, we frequented Chiba, the first place Mark worked, a classic sushi bar with focus on rolls and a family dining experience.  He joined the Chiba team when he was only 16 as a server. While working as a server at Chiba, he always enjoyed watching the sushi chefs working and interacting with customers and just 3 years later was one of their featured sushi chefs. After Chiba, Mark lead the team at @asanebo in Studio City, one of the valley’s premiere omakase experiences with both plated and sushi dishes showing off a range of experience in culinary technique. It was there Mark really honed his craft for fine dining, something he’s taken with him to #BrothersSushi. Now nearly 20 years into his career having mastered his craft and built relationships with some of the best suppliers here locally and in Japan, Mark set out to create his own dining experience bringing new life to Brother’s sushi. Brothers has been a staple of the valley for years, but late last year Mark and his partner Restaurateur Steve Vartazarian @Steve____V acquired the location to bring back the glory of this once iconic sushi destination. Unassuming and inconspicuous from the outside, a full remodel with beautifully revamped interior awaits highlighting an extensive japanese knife collection and of course we loved the dyson and toto toilets too haha. Did you know that escolar fish and morels are forbidden foods in several countries, and claimed to be toxic 😲  But... 😅 Czech Republic isn’t one of those countries and we are very challenged to prove Google wrong 🤣🤣🤣
