I literally was thinking about this dinner since i woke up. it looks like a hot mess, but it is soooo good. someone at work told me last year to try this riced cauliflower stir fry and my answer immediately was 'absolutely not.' i can't believe i had been missing out on this for so long.
also proud of myself because after work i went to a happy hour. normally i would stop for fast food on my way home since it was late. but i made myself go home and actually make dinner instead. didn't spend any money and it was only #4sp total. worth it.
2 cups tj's riced cauliflower stir fry- #1sp grilled chicken #0sp fried egg #0sp 2 tbsp tj's sweet chili sauce #3sp
Last day of vacation called for a starbucks trip ☕️
i was feeling cheap, so i brought my own scrambled eggs with me- added tj lite mozzarella for #1sp, and a venti iced americano with almond milk for #1sp as well. working on a grocery list so i can meal prep this afternoon to get ready for this short week and actually stay on track.
i stepped on the scale this morning and was pleasantly surprised that i actually didn't gain any weight the past week and a half. not totally sure how that happened, but i will take it! the difference from other years is that i'm not going to continue to eat like that every day. treating yourself on vacation is important, but getting back on track after it's over is just as important too ✨
