This week’s #MealPrep;
Chicken Teriyaki Stir Fry -
Ingredients:
1 ½ pounds skinless, boneless chicken breasts
1 onion, sliced
1 large red bell pepper
1 large green bell pepper
2 cups broccoli florets
¼ cup soy sauce
¼ cup water
1 tbsp cornstarch
1 ½ tbsp honey
1 tsp minced garlic
1 tsp minced ginger
3 tbsp olive oil
4 cups cooked brown rice or cooked quinoa
2 tsp sesame seeds
2 tbsp chopped scallions

Directions:
1.In a small bowl, combine water and cornstarch.
2.Add the soy sauce, honey, garlic and ginger and mix to combine. Set aside.
3.In a wok, heat 1 ½ tablespoon of olive oil over medium-high heat then add the chicken, season with salt andblack pepper to taste and stir-fry until done.
4.Remove the chicken from the wok and set aside.
5.In the same wok heat the remaining olive oil and add the onion, bell peppers and broccoli and stir-fry for 2-3 minutes.
6.Return the chicken into the wok and stir in the soy sauce mixture and continue to stir fry for 3-4 minutes or until the sauce is thickened.
7.Divide the brown rice evenly between 4 food containers, top each with chicken and vegetables and sprinkle with scallions.

🚨New Meal Prep Recipe 🚨
Black bean, lentil, mushroom and thyme pasta - 🔹INGREDIENTS 🔹
2 cups cooked lentils 
1 cup cooked black beans
4 tbsp extra virgin olive oil 
1 onion, finely chopped 
3 cloves garlic, crushed 
1 pound white mushrooms, sliced 
1 tsp dried thyme
2 tbsp chopped parsley plus extra to serve 
½ tsp crushed chili pepper 
8 oz whole grain penne pasta 
4 oz goat’s cheese, crumbled 
sea salt and cracked black pepper, to taste 
1 tsp fresh thyme leaves, to serve (optional) -
🔸DIRECTIONS 🔸
1. Heat 2 tbsp of olive oil in a large heavy-based saucepan over high heat. 
2. Add the onion and cook, stirring for 3–4 minutes or until softened. 
3. Add the garlic and cook for 30 seconds. 
4. Add the mushrooms and cook, stirring occasionally for 5-10 minutes or until tender. 
5. Add the thyme, parsley, crushed chili pepper, lentils and beans. 
6. Season to taste with salt and black pepper. 
7. Mix to combine and set aside.
8. Cook the pasta in a large saucepan of salted boiling water for 7-8 minutes or until al dente. 
9. Drain and add the pasta to the pan with black bean mixture. 
10. Drizzle with 2 tbsp olive oil, season to taste with salt and black pepper and mix to combine. 
11. Divide the bean mixture between 4 food containers and top with the goat’s cheese and fresh thyme.
